Recipe

Made a great Summertime Chicken Chili today for lunch. I found a recipe online, then after taking away, adding, and tweaking, here's what I came up with. It was fantsastic.

Summer Chicken Chili

1 pound of chicken tenders, cut into 1/2 inch pieces, seasoned with salt & pepper
1 onion, chopped
1 can black beans, rinsed and drained
1 can northern beans, drained
1 can original stewed tomatoes, with juices
1 can original seasoned Rotel Diced Tomatoes (the kind you use for Rotel dip, obviously)
1 tablespoon Chili Powder

In a large saucepan, heat chicken and onions over medium heat, sauteeing with a little olive oil (i also added about a tablespoon of minced garlic that we keep in the fridge but if you don't have it on hand I don't think it would make or break the recipe). Once chicken is cooked through, add remaining ingredients, mixing together. Bring to a boil, then turn to low and let simmer about fifteen minutes. It's great for an easy quick lunch at home, and delicious! It's spicy and has great flavor.
