Food Therapy

Wait a minute.

Has it really been a week since I've written anything? 

I guess life does get in the way.

I've been feeling the cooking juices lately, and it's been good.  Made a whole bunch of fresh veggies on Sunday night from the farmer's market HERE.  Cooked the corn (Thomas schucked his first corn), and made the peas from a play on a friend's recipe HERE.  Then, here's the big one:

I made fried okra from scratch. 

Never done it before, and it turned out, my oh my, delicious and sweet. 

Tasted just like summer in the south should taste....

Then Monday night, I made a BBQ Chicken Pizza that was delicious.  A perfect weeknight meal, and all parties at the house enjoyed it, even though Thomas loved licking the sauce off more than eating the chicken, but that's considered a win in my book, if he eats more than muffins and yogurt for dinner these days.  They promise me he eats like a champ all day at school, which tells me he either just prefers eating his larger meals at lunch, or that he prefers Miss Mary's cooking at school to mine :-)

Then last night, I made a great little veggie pasta toss.  Rotini, olive oil, garlic, tomatoes, mushrooms, zuchini, spinach, and feta.  Cook pasta; sautee veggies with a little red wine till it's all cooked, and toss the veggies together with the pasta and feta cheese.  Good grief it was good. 

Sometimes, absorbing yourself in the kitchen is a good thing.  Tasting the ingredients, putting yourself into the food.  Savoring the journey and the mistakes that end up making a delightful meal. 

Sometimes, when a meal turns out right, turns out delicious, then I feel like I'm doing something right in my life right now: that something's gone according to plan. 

So, I'll take it. 
And seconds :-)
