Meatless Chili

I have a carnivore for a husband, and as I've talked about before, I like to try to incorporate at least some meatless meals into our rotations. I figure we could both benefit from it. Well, I made a vegetarian chili last night that I thought was both filling and perfectly delightful. I did it in the crock pot, which also means super easy. See below:

-1 onion, sliced, chopped, however you like it.
-1 can Original Rotel Tomatoes, undrained
-1 can Original Stewed Tomatoes, undrained
-2 cans of Bush's Chili Magic Starter Beans (these cans include all seasoning, undrained
-A little bit of cajun seasoning (i'm sure you could leave this out if you wanted to)
-1 bag of the BOCA meatless crumbles (soy crumbles)

Mix everything together, and cook on low for about six hours. Serve with whaever you like: sour cream, cheese, cornbread, or fritos.

Just had the leftovers for lunch, and it was even better left over. Had a great chili flavor without all the fat and bad cholesterol in ground beef, plus all the protein of "soy crumbles." At least the soy crumbles are made to look like ground beef :)

sounds really yummy. i'll be back for this as soon as i get my appetite back :/ i love me some soy meal starter though. we use it in spaghetti sauce and taco soup too. sometimes i'll do half ground turkey and half meal starter if i'm making a big enough recipe! hope youre doing well!
